1 tsp of coconut oil

250 grams of grass fed mince beef

2 - 3 tbsp of organic tomato puree

4 eggs

3 handfuls of spinach

Salt and pepper to taste

Heat coconut oil in a frying pan, add mince and cook for 2 minutes or until browned.

Add tomato puree and simmer until mince is cooked about 3 - 5 minutes. Add spinach and stir in to wilt. Season with salt and pepper.

Make 4 holes in the mince with a spoon for the eggs. Crack eggs into the holes before placing frying pan under the grill (medium heat) for 3 minutes or until eggs have cooked to your liking. I like mine runny.

Serve with chopped avocado, fresh tomatoes and coriander. Or on a bed of streamed greens depending on the time of day

Tip: Save a portion for a snack later in the day.
