Smoked Haddock & Kale Omelette

280 grams of smoked haddock, 1 inch cubed

4 large eggs

2 cups of kale, chopped (extra for serving)

1.5 tbsp of double cream

1 tbsp of spring onions (tops only),chopped

Salt and pepper to taste

2 tsp butter

Steam kale in a steamer until wilted, take off heat.

Meanwhile melt 1 tsp of butter in a pan, add spring onion, smoked haddock and cream.

Cook until the fish has changed colour and warmed though. Season with black pepper. Take off the heat.

In a bowl beat the eggs, season with salt and pepper.

Using a frying pan, heat the remaining butter, add egg mixture to the pan then the fish mixture. Cook on the hob until underneath is golden, then place under the grill to cook the top side.
